Susie’s Shoepeg Corn Salad

A friend shared this recipe with me several years ago after serving it to my family in her home.  It was an instant hit and quickly became a must for our Thanksgiving meal.  It can be a bit expensive with the colorful peppers but it is definitely worth it.  Everything can mixed ahead of time except the Fritos.  They must go in at the last minute so they maintain their crunch.

Shredded Cheese

2 Can Shoepeg Corn (drained)

1 green pepper

1 red pepper

1 orange pepper

1 purple onion

Jalapeno Peppers (to taste)

Miracle Whip

Fritos

Chop veges.  Combine veges with Miracle Whip.  Add cheese.  Just before serving add Fritos.

That’s all there is to it.  Sorry I don’t have any step by step photos.  You’ll have to use your imagination.
